These beauties are shucked on-board local day boats, size graded, then vacuum sealed (in 1 lb bags) & frozen just after landing. Scallops freeze wonderfully, and the freshness and flavor shines through!

Frozen: Each bag contains 1 lb, approximately 20 scallops (around 4 servings, depending on appetite). Thaw in refrigerator overnight. Do not re-freeze.
Optional: we recommend removing the side muscle from each scallop before cooking to maximize consistent texture.
